**Callahan is 2!**

All right another week has come and gone. I think it's starting to be my Monday tradition to catch up on laundry and do my blog ;)

Callahan's birthday was a success! 
 

 We had so many friends and family. It made it a great day. I'd say he made out pretty well on some very generous gifts from everyone who loves him so much and not that a two year old says too much, but I think he enjoyed it all as well. Big brother Oakley handled all of it very well too. Callahan has been an avid little people fan pretty much since he started playing with toys as well as a ball lover, however, lately he has been obsessed with basketball and baseball and football, oh and I guess soccer.......that pretty much covers close to every ball sport. So yes we think he's going to be quite the little athlete. He got some great animals to go along with his little people zoo, he's already lined them up a couple of times to show them off as well as a huge little people little wheelies race track, with music and movement it's right up this kids ally! He got balls of course and a great bucket of mega blocks that hes obsessed with as well, and a bubble leaf blower. I think he's set for entertainment for quite a while! Finally, Jeremiah and I bought him a basketball hoop. It is the ticket item in the house every evening. Sharing has thankfully become second nature with only one "original" basketball for the hoop. I'd say both boys are doing very well. It's so fun to watch them interact like this finally and play with each other more and more.
I also found myself continuing to apologize for my lack of display and effort in decorating and making goodies, as I often consider that my "thing". Entertaining, cooking, and baking, but finding that being in a small town the things I once so easily had access too is now a little bit harder and need to be more planned out. BUT bottom line is,  I feel everyone thought it was a great time and a wonderfully party. All that matters is the birthday boy enjoyed it and time was spent with the people closest to us! I can't say thank you enough to all the people who love him and us so much. It's a huge blessing.



 Now onto some food and recipes!

My latest obsessive snack......Spicy Baked Chickpeas!!! They are so amazing and nothing but healthy! I posted it on facebook and had quite a few responses from people wanting the recipe so here it is!

Dried and ready to bake

All done

2 cans (14oz) Chickpeas
1 1/2 Tbsp Olive Oil
Spice Mix
    2 tsp Sugar
    1 1/2 tsp Cumin
    1 1/2 tsp Paprika
    1 tsp Garlic Salt
Drain and Rinse chickpeas. Spread out on a paper towel or towel to dry, place another towel or paper towel on top and rub gently to help dry. Some skins may peal off, you can throw these out or keep them, I kept mine.  The dryer they are the better. Preheat oven to 425. Place dried chickpeas in a large bowl and pour in Olive oil, stir until they are coated. Add Spice mix stirring to coat chickpeas. Line a 9x13 pan with parchment paper, place chickpeas on pan and bake 40-60 minutes, stirring half way through. I set the timer for 21 minutes then stirred and baked for another 23 minutes. They can burn quickly between the 40-60 minute time so watch them closely, I'd say 45 is safe. They will get crunchier as they cool. I like to have a mix of burnt, perfect, and soft, preferably myself.

I also made everything for Callahan's birthday gluten free. We had spiced apple dip with apple slices, taco layer dip with chips, GF sugar cookie bars, GF candy dipped pretzels, GF white cupcakes (Betty Crocker mix), Black bean cupcakes, and BBQ little wienies. You can follow the links I have for the food by clicking on them if you want the exact recipes, otherwise my versions are below. I also added a couple of tablespoons of GF flour to the black bean cupcakes. Last time I made them they seemed to come out pretty flat and I like them to have a little raise so this seemed to solve that problem. 

Party favors


8 oz Cream Cheese, softened
1/2 c sugar
1 C brown sugar, packed
1 tsp vanilla
1 tsp spice mix (below)
1. Cream the cream cheese and sugars, so the sugar is almost dissolved and you can't taste the grains when eating it.
2. Mix in vanilla and spices
Spice Mix
1/4 c cinnamon
2 tsp ground nutmeg
1 tsp all spice
1 tsp ginger

21/2 C GF flour
1/2 tsp baking powder
1/2 tsp salt
1/2 C butter, softened
1 C sugar
1 egg
1 1/2 tbsp sour cream
1 tsp vanilla
1. preheat oven to 375, 9x13 pan
2. Mix flour, powder, and salt, set aside
3. Cream butter and sugar
4. Add egg
5. Add sour cream and vanilla
6. Slowly add flour
7. Gently press in pan
8. Bake 17-20 minutes
Frosting
1/2 c butter, softened
4 C powdered sugar
1/4 c half and half
1 tsp vanilla
Food coloring
Cream butter, sugar, and half and half. Stir in vanilla and color to desired color.

Cold weather


Wow, I completely take full recognition of my laziness to blog since we got back from Florida Sunday afternoon. With wind chill advisories and the temps staying in the negative it has been hard to leave to couch and snuggling with my littles, but day to day activities are keep us going. Callahan turned 2 yesterday!! We celebrated with a fun trip to the big Pizza Ranch for some GF pizza and fun with friends. Thought we would blow away getting there (wind was at 40+mph!!!) But it was a fun time.
  We got back from Florida Sunday morning and had a great time while we were there. One of our biggest fears were the plane rides there and back with Callahan, but both boys were amazing travelers even through the few bumps. The weather was perfect every day except Thursday. We got to hit a few beaches and go to some fun places to eat and of course great shopping! Tim and Nancy live in a great community and Nancy has really made their new house into a welcoming home for all. I had never been to Florida before so I was pleasantly surprised to see their beaches were white sand. I am used to the Outer Banks sand and always thought they were the same. This is the sand where its easy to build great sandcastles and bury each other. Here's a few highlights/low lights of the trip :)
1. Warm weather and Sunshine!!
2. The boys got to drive a mini mustang convertible like Grandpa's
3. Will never fly Allegiant Air again......if you are in the future I'm sure your experience will be different than ours, but this is what we have decided.
4. Will probably always book a rental car through Dollar Rental.....after arriving in Orlando and having our rental car info completely messed up, they were the one and only company that would help us out. They were amazing! They were even playing a Christian radio station over the speakers, I would pay $100 more to book through them from now on for what they did for us.
5. Will never book through Advantage Car rental again ;)

7. Jeremiah got to go for his runs outside!
8. Starbucks on every corner
9. Family time!

We hope we can go again soon. It's definitely making us consider a move to a warmer climate someday.

Cabin Fever

I always feel like I am keep up on writing on here fairly well and before I know it another week has gone by. As bad of cabin fever as I feel I have as well as the boys and Jeremiah, I definitely can't complain that time is standing still. So the big event this week, as I'm sure you know, was yes my grandpa's 90th birthday party! Oh you thought I was going to say the Super Bowl? I'll get there don't worry ;)
  Last Sunday we made our way down to Sioux Falls to celebrate my Grandpa Goehring's 90th birthday party. I have to say he still looks like he did almost 20 years ago to me. I hope I can age as well as everyone in my family has. He was absolutely adorable at how excited he was for his party. It was definitely a bigger deal than the super bowl :) And every generation was there to celebrate. My grandpa has 4 children, 8 grandchildren, and 12 great grandchildren + 1 on the way in April. How great is that! Enjoy some pics below :)
   Of course we did record the Super Bowl and made it a low key night with just Jeremiah and I. We watched the commercials of course and the big half time show. I have to say I usually am a very big fan of Beyonce and watching the show I did think it was one of the better ones they have had perform in recent years, however I was disturbed to found out of an interview she did announcing that she fully and completely believes that she is possesed when on stage. Am I the only one who is just finding this out? It's even from 2yrs ago, but I am saddened to say I will not be bustin' a move to her stuff anymore. It just goes to show that yet again people and things of this world are just that, of the world and they are nothing to look up to. Just YouTube Beyonce and possessed to find the link :)
     Ok, my favorite commercial if I had to pick just one, had to be the pistachio one.You remember that one? Here you go if you missed it. You can never go wrong with me and letting me watch fun music with bad dancing. :)
 


We made stuffed mushrooms as a side along with our chicken last week. I put Jeremiah to work on taking out the pulp of the mushrooms since he did such a good job on the tomatoes :)Very good! Could eat them just as a meal in themselves.

With going Gluten Free going out to eat or to events have probably been the hardest adjustment as I have needed to pre-plan for snacks or take along what was needed. So since we couldn't have the cake at the birthday party I brought along GF chocolate and white cupcakes. The white were just a GF mix from Betty Crocker but the chocolate I have been wanting to make for a while, they were made with black beans and they tasted amazing!!

New news in the house......Jeremiah took the plunge and shaved his head!! :o He's been wanting to do it for quite awhile,  I think we were both scared for the change, but it turned our very good! And just in time for the hot Florida sun (also being represented by our Oak man) Leaving for Florida early Sunday morning.
